Even if you’ve never ordered Starbucks Egg Bites, this recipe needs to be in your rotation. They’re a perfect brunch dish to impress friends and family. The secret though is in how easy they are to make. 

Personally, I usually make them for lunch. They’re an easy and fun meal to whip up when you need something besides a sandwich or salad. They’re also super customizable for everyone living under your roof.

This recipe makes a dozen egg bites, which is a hearty 3 servings. Let everyone in your home put what they want in them, or leave out what they don’t want. Just call them into the kitchen when it’s time for topping. Kinda like making pizza!

Do you need a Sous Vide to Make Starbucks Egg Bites?

Full disclosure, I do not own a sous vide machine. So no, you don’t need a fancy machine to make Starbucks Egg Bites of any flavor or variation. On top of that, you can still get the velvety texture without one.

The key is using a water bath to help steam your egg bites and give them that sous vide texture. We’ll go over this more below, but a single shallow bowl filled with water will work just as well as an expensive machine.

Does Starbucks use real eggs in their egg bites?

This is a funny question to cover in a recipe, but I get it. We’re now in a world with so much modified food that it’s sometimes hard to tell what’s real and what’s not. But yes, Starbucks uses real eggs in their Starbucks Bacon Gruyere Egg Bites, and in all their egg bites.

Now to clarify, they do use eggs, but they also use a TON of other ingredients. When I looked up the actual ingredients in their egg mixture, I was a little shocked. I probably shouldn’t have been, but I was.

The ingredients in the Starbucks Bacon Gruyere Egg BitesRecipe include ingredients you can pronounce such as eggs, pasteurized milk, butter, and cornstarch. But there are also ingredients that I’ve rarely heard of such as Maltodextrin and Natamycin which is a “natural mold inhibitor”! What?! My thoughts exactly.

In this recipe, there are less than a dozen ingredients (with toppings!) So make your egg bites at home. They are tastier, healthier, and have ingredients you can pronounce.

Making This Starbucks Bacon Gruyere Egg Bites Recipe

Starbucks Bacon Gruyere Egg Bites are super easy to make. You probably have most, if not all, of the ingredients already in your refrigerator and pantry for these faux sous vide egg bites.

Kitchen Equipment

Silicone Muffin Pan or silicone egg mold

Cuisinart or blender

Shallow baking dish for water bath

Ingredients For Starbucks Egg Bites

  • 8 eggs (you can also use egg whites if that’s your thing)
  • 1/2 cup whipped cottage cheese (or regular)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ cup shredded Gruyere cheese (or shredded cheese of choice)
  • Pinch of salt
  • Freshly ground black pepper
  • Cooking spray

For Topping Egg Bites

  • 1/2 cup bacon
  • 1 diced Roma tomato
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup crumbled bacon or pancetta
  • Shaved Parmesan cheese
  • 2 tbsp minced chives

Instructions 

Prep: 10 minutes

Cook time: 45 minutes

  1. Preheat the oven to 325 degrees.
  2. As soon as you turn on your oven to preheat, place your water bath on the bottom rack.
  3. In a blender make your egg mixture by combining the eggs, cottage cheese, Gruyere cheese, garlic powder, onion powder, black pepper, and salt. Blend until smooth.
  4. Spray the insides of your silicone muffin pan and pour your egg mixture in equal amounts into each cup. You should have enough for all twelve cups.
  5. Once you’ve poured your egg mixture into the muffin pan, top with whatever toppings you’re in the mood for.
  6. Place in your oven and bake for 40-45 minutes until the egg bites are firm to the touch.

If you’re not using a silicone muffin pan or egg mold, your egg bites will cook much much faster. So check them after 10 minutes if using a traditional muffin pan. 

Toppings are your friend! Get creative and don’t feel confined by my recommendations. You could even go a little savory and sweet with less garlic and onion powder and adding a bit of maple bacon. 

If you’re watching your wallet, swap the gruyere cheese for a sharp cheddar cheese, mozzarella, or whatever you find on sale in your local grocery store. Let’s be honest: Cheese is delicious and it’s hard to go wrong when it comes to cheese.

Do you have to use cottage cheese?

I know the world is split on cottage cheese for various reasons. It’s kind of like cilantro in a way. You either hate it, or you love it. I personally feel a little split on it myself, which is part of the reason this recipe calls for whipped cottage cheese. There is just something about the smaller curds that make it more appealing. Though I will say, I’m a huge fan of pineapple cottage cheese. 

Back to the point, though. Yes, you can definitely use something else besides cottage cheese. Try substituting cream cheese or ricotta. Both work wonderfully. Just as an FYI, ricotta will be more expensive. So expect the additional cost.  And at the end of the day, I swear on my favorite Microplane that you’ll never know that there is cottage cheese in this recipe.

Toppings Ideas for Starbucks Egg Bites

You can go with the traditional topping of bacon (or pancetta), cheese, tomatoes, and chives like I’ve done here. Or, you can mix it up a bit. Below are a few toppings and mixes that I’ve found flavorful and out of this world.

  • Ham and pineapple for a Hawaiian pizza twist.
  • Using cream cheese instead of cottage cheese? Throw in some smoked salmon and top your egg bites with everything bagel seasoning!
  • Mozzarella, tomato, and basil (throw in some Italian seasoning, and bam, pizza egg bites!)
  • Hot sauce! Regardless of what you’ve put these egg bites with, you’ll need your condiments. (Aren’t condiments a religion?) From hot sauce to ketchup, you do you when it comes to what you dip these babies in. Maple syrup? Serve these egg bites with pancakes and why not?!

It really depends on what you’re in the mood for and when you are serving these egg bites. Below are a few options for rounding out your meal depending on the occasion.
