Ok-  I’ve had a crazy week and have had NO time to cook dinner!   Don’t you love anything that you can cook in one pot? When you have three kids running to three different practices and in entirely different directions, it can be difficult to get dinner on the table.

My family is doing a no eating out challenge for the month and it’s been VERY difficult.  Sometimes it would be so easy to grab fast food, but we’re all very competitive and not going to fail.  We’re getting tired of slow cooker and Instant Pot meals so I thought I would change it up and added this to my meal plan. I’m going through my normal dinner recipes quickly.

This smoked sausage recipe with potatoes and peppers is an easy weeknight dinner that the whole family likes. Make sure to save your leftovers or even double the recipe! This is a delicious breakfast. You can add a fried egg on top.

Doesn’t it look so good?? The cooking time on this is only 15 minutes and no baking dish is needed.

  3. You don’t have to turn the oven on. I love meals that don’t go in the oven. It’s hot in North Carolina and I love meals that are grilled or on the stovetop.

Kitchen Tools to make sausage, peppers, onions and potatoes

Cutting board mats– These are so easy to clean and use when cooking. You can bend them easily so that makes it easier to add ingredients to other bowls or pots and pans. I use these exact ones almost every day. They can even go in the dishwasher for cleaning.

Cast Iron Skillet– I love my cast iron skillet. You don’t need one for this recipe, but if you have one then you need to pull it out for this dinner. If you don’t have one, then I would invest in one.  They are awesome!

Wooden Spoons– I have about a dozen wooden utensils for all kinds of recipes. This is a great set with different kinds. I love that they are inexpensive and work on all kinds of surfaces.

Ingredients for Smoked Sausage and Potatoes Skillet

Smoked sausage– I used beef sausage, but you can use your favorite. Hillshire Farms has chicken and turkey sausage. I think they even have Italian sausage.

Potatoes– I like to use red potatoes, but you can even switch this out and use sweet potatoes if you prefer.

Bell Peppers– I used one yellow and one orange, but you can use whatever you have at your house. I normally get one of those colored 3-packs at the grocery store so I use what comes in that. Green bell peppers are usually cheaper than the colored ones and I usually save my red bell pepper to snack on because I love its flavor.

Olive oil

Onion– You ca use a white or yellow onion.

Basil– This recipe calls for dried basil, but if you use fresh you’ll need to reduce the amount you use. You can also use Italian seasoning. Everyone usually has that in their seasonings.

Salt and black pepper to taste

Optional- This tastes great with a little shredded cheddar cheese on top too!

How to make Smoked Sausage, Peppers, Onions and Potato Skillet Recipe

Step 1

Add cubed potatoes into a greased large skillet over medium heat. Cook for 8 minutes, occasionally stirring.  

Step 2

Add in chopped peppers and onions.  Cook for 3 minutes.

Step 3

Slice smoked sausage and add to skillet. Cook for another 3 minutes.

Step 4

Mix in basil and serve.

Note: My husband adds some red pepper flakes on top to give it a little kick.

  • 1 11 oz package beef smoked sausage sliced
  • 3 potatoes cubed
  • 1 orange pepper chopped
  • 1 yellow pepper chopped
  • 3 tablespoons olive oil
  • 1 onion chopped
  • 1/2 teaspoon dried basil
  • salt and pepper to taste

  • Add cubed potatoes into greased medium-high heat skillet. Cook for 8 minutes, occasionally stirring.

  • Slice smoked sausage and add to skillet. Cook for another 3 minutes.

Can you cook smoked sausage in the oven?

Spray a baking sheet lightly with nonstick spray (not too much!) and place your sausages on a baking sheet. Then slide the baking sheet into the oven. Bake the sausages for about 10 minutes, flipping halfway through. Your Kiolbassa Smoked Sausages are now ready to serve.
