  • 2 1/2 - 3 Pounds Bottom Round Roast

  • 1/2 Cup reduced sodium soy sauce

  • 1/4 cup + 2 tablespoons white vinegar cider vinegar

  • 1 6 ounce can tomato paste

  • 4 tablespoons brown sugar

  • 1/4 cup molasses cherries

  • 1 1/2 teaspoons salt

  • 1/2 teaspoon cayenne pepper

  • 1 tablespoon Dijon-style mustard

  • 2 cups each shredded carrots and diced granny smith apple

  • 2 cups diced granny smith apple

  1. Step 1

    Place beef Bottom Round Roast in 4-1/2 to 5-1/2 quart slow cooker. Combine whiskey, 1/4 cup vinegar, tomato paste, 2 tablespoons brown sugar, molasses, salt and pepper; pour over roast. Cover and cook on HIGH 4 to 6 hours or on LOW 8 to 10 hours, or until beef is, fork-tender.
  2. Step 2

    Remove roast from slow cooker; shred with 2 forks. Skim fat from sauce as needed. Return beef to slow cooker; stir to combine with sauce.
  3. Step 3

    Meanwhile, combine remaining 2 tablespoons vinegar, remaining 2 tablespoons brown sugar and mustard in large bowl. Add carrots and apples; mix well. Season with salt and black pepper, as desired. Refrigerate until ready to serve. Serve beef with slaw.
  4. Step 4

    This recipe can be made in a 6-quart electric pressure cooker. Place beef Bottom Round Roast in pressure cooker; add 1/2 cup beef broth. Close and lock pressure cooker lid. Use beef, stew or high-pressure setting on pressure cooker; program 90 minutes on pressure cooker timer. Use quick-release feature to release pressure; carefully remove lid. Shred beef; return to pressure cooker. Combine cooking liquid, whiskey, 1/4 cup cider vinegar, tomato paste, 2 tablespoons brown sugar, molasses, salt and pepper in small saucepan. Simmer 20 to 25 minutes until desired consistency is reached. Combine sauce and shredded beef. Continue as directed in Step 3. (This recipe variation was tested in an electric pressure cooker at high altitude. Cooking at an altitude of less than 3000 feet may require slightly less cooking time. Refer to the manufacturer’s instructions.)

How To Make Crockpot Shredded Beef

Like most slow cooker recipes, it’s almost TOO easy to make this. Simply toss in the 5 ingredients and let the Crockpot do all the work. This meal is perfect for a working parent!

Step 1: Place the chuck roast in the Crockpot and toss the chopped onions over the top and sides of the roast.

Step 2: Sprinkle the top of the onions and roast evenly with the dry gravy packets and the onion soup mix.

Step 3: Pour the beef broth on top and place the lid on the Crockpot.

Step 4: Cook the beef on low for 8 hours or until the beef is easily pierced by a fork. Once it shreds easily, you know it’s ready!

Are you a gravy a-holic? Don’t worry, so am I. On days I really want a lot of delicious gravy to soak up with my buttery role, I double the liquid in this recipe and add a second packet of dry gravy mix.

So instead of the 1/3 cup beef broth and 1 packet of dry brown gravy mix. Use 2/3 cup beef broth and 2 packets of dry brown gravy mix!

How can I make it sweeter?

This may sound like an odd question to most, but there are plenty of folks out there that like a hint of sweetness in their roast beef.

If you want to lightly satisfy your sweet tooth, you can sprinkle in some brown sugar, or even add a can of coke to the mix! If you add coke, just note that your end result will have more liquid than what is pictured with this recipe.

Should I sear the roast?

It is totally optional, but not necessary. We usually do not sear the roast out of total laziness. However, if you do sear the roast it will absolutely add to the flavor!

When you sear a roast, you caramelize the natural sugars on the outside of the meat, which will give an extra rich flavor to the finished dish. So if you have the time and don’t mind washing an extra dish, go ahead and sear your roast on all sides in a large skillet over medium-high heat.

How long will the shredded beef stay fresh?

Keep the shredded beef in the Crockpot on the “warm” setting until you’re ready to serve it. If you have any leftovers, seal them in an airtight container and keep them in the fridge for up to 5 days.

You can reheat your leftovers in the microwave or the Crockpot, if you have the time! Just set your Crockpot to the “high” setting, toss in your leftovers, and let it heat up. Mix the beef around every few minutes to make sure it reheats evenly. Enjoy!
