Fresh vegetables are the best unless they are fresh out of the garden, and then you cannot beat them. I love Fresh Green Beans and New Potatoes cooked together with a little bit of ham or bacon.

Growing up, we could not wait for the first crop of green beans and potatoes to come out of the garden.

This is another one of those side dishes that Mother would cook a pan of cornbread, slice some onions and tomatoes, and call it a meal.

Oh! Another thing, pepper sauce was always on the table alongside the salt and pepper to go with all that lovely pot liquor.

Green Beans were on our Easter table this year.  They cooked up relatively quick and really went well with the rest of our Easter menu.

When I cook Fresh Green Beans and New Potatoes, I leave the green beans and the potatoes whole.

It is best to try and have all the potatoes close to the same size so as not to overcook some of them----and when you reheat them, they are not mushy.

We love the leftovers, so I usually cook a lot at one time.

WHAT YOU NEED TO MAKE GARDEN NEW POTATOES AND GREEN BEANS

  • Large heavy bottom dutch oven
  • Fresh green beans with ends cut off or (4 (15 oz.) canned whole green beans)
  • Bacon, Ham or salt pork, diced
  • New potatoes, washed
  • Salt and pepper
  • Coriander (optional)

HOW TO MAKE GARDEN NEW POTATOES AND GREEN BEANS

  • In a large Dutch Oven, cook green beans and bacon or ham pieces on medium heat with water up just over the beans.  Cook for 30-45 minutes.
  • Add potatoes and salt, pepper, and coriander, cover and turn the heat down to low, cook another 20-40 minutes or until the potatoes are done when pierced with a fork. (Depends on how big your potatoes are.)
  • The amount of ham, salt, and pepper can be adjusted to your taste.

Green Beans and New Potatoes

A simple side dish full of flavors from the garden, homegrown green beans, and the first crop of new potatoes.

Ingredients

  • 3 lbs. fresh green beans with ends cut off or 3 (15 oz.) canned whole green beans or (24 oz.) whole frozen green beans
  • 1/4-1/2 lbs of Bacon, Ham or salt pork, diced
  • 12 small new potatoes, washed with ends trimmed
  • 2 teaspoon salt
  • 2 teaspoons coarse black pepper
  • 1 teaspoon coriander (optional)
  • 1/2 cup water (optional)

Instructions

  1. In a large Dutch Oven, cook bacon or ham pieces on medium heat until slightly crisp.
  2. Add green beans with water. Cook for 15-25 minutes.
  3. Add potatoes and salt, pepper, and coriander, cover and turn the heat down to low, cook another 20-30 minutes or until the potatoes are done when pierced with a fork. (Depends on how big your potatoes are.)

How long does it take green beans to cook?

Cook the green beans, covered, in a small amount of boiling salted water until crisp-tender: 10 to 15 minutes for whole or cut green beans. 5 to 10 minutes for french-cut green beans.

How do you cut fresh green beans for cooking?

Line up all the ends against your knife edge. Then grab them in one hand, and cut off the ends with a knife. Quickly flip the beans the other way, and then push them towards your knife blade so that the other ends line up (see the photo above). Then grab the pile and slice off the other ends.
