When I am rushed in making dinner or I am lacking culinary creativity, I always seem to turn to boneless skinless chicken as the cornerstone of our meal. And I don’t think I’m alone in that habit! There are, after all, about a million-and-one ways to prepare it and most of them are quick and easy. This oven-baked preparation is both of those things – since the chicken is bite-sized it bakes up fast – but thanks to the seasoned buttery coating, it’s also incredibly tasty. (In other words, here’s a go-to delicious protein option for you that works any night of the week.)

The only work you need to do is to cut up some chicken breasts and toss them in a mixture of paprika, cayenne pepper, garlic powder, onion powder, Italian seasoning, and salt and pepper. You'll only need a few simple ingredients to make this simple and tasty chicken recipe. The exact measurements are included in the recipe card below. Here's an overview of what you'll need:

Chicken drumsticks: I use eight drumsticks in this recipe, each weighing about 4 oz. I don't remove the skin - I think it's the best part! If you buy them in packages of five, you can make ten using the same recipe and increasing the olive oil by about half a tablespoon.

Olive oil: I love cooking with this delicious oil. But if you'd rather use an oil with a higher smoke point, you can use melted butter instead.

Kosher salt and black pepper: If using fine salt, you should reduce the amount you use, or the dish could end up too salty.

Spices: Garlic powder, onion powder, smoked paprika, and cayenne pepper. The cayenne greatly improves the flavor of this dish. It adds a hint of spice without overwhelming the dish. But if you're not a fan of spicy foods, try using just ⅛ teaspoon (a pinch).

  • Roasted vegetables
  • Loaded mashed cauliflower
  • Roasted cabbage
  • Roasted frozen cauliflower

Storing leftovers

You can keep the leftovers in the fridge, in an airtight container, for 3-4 days. Reheat them gently, covered, in the microwave on 50% power.

Or do like I do and enjoy them cold! I sometimes remove the skin, cut them into chunks, and use them in a chicken cobb salad. Or I simply make myself a picnic-style plate of cold drumsticks, cauliflower "potato" salad, and some quick pickles.
