There are few things more simple or more delicious than these amazing chocolate covered fluffernutter "cookies." These go by a few names - Ritz Cookies, Cracker Cookies, New Mom Cookies, Knarr Cookies, Ho-Ho's, and a handful of other family specific names. No matter what you call them, you are going to love making and eating these simple treats. These might be a no-brainer for some people, but I actually had never had these until a few years ago, when my sister-in-law made them one Thanksgiving we were visiting my parents in Kentucky. I had one bite and was sold. These have graced my goodie plate consistently since then.

You really can't get more simple than mixing together peanut butter and marshmallow cream, smearing some on a Ritz cracker, adding a top, and then dipping the whole thing in chocolate. I know it doesn't sound like much, but these are magic - trust me on this one. There's something so delicious about all that sweet and salty together, and the moisture in the dipping chocolate changes the texture of the cracker. Don't get me started on that peanut butter and mallow cream center, either. I love these little things!

These fluffernutter cookies are great this time of year for a few reasons. One is that you can make them ahead of time. They store really well for a few days at room temperature! Just be warned, you might eat them all if you try to store them for very long. Another thing I love is that the kids can help with these. Adding some filling to the center of a cracker is a great job for my older kids (7 and 9 years old), and even the kiddos as young as three can drop them in melted chocolate and pull them out with a fork. Adding holiday sprinkles to the cookies is a job all the little people love and even the smallest hands can help with. You can't beat a simple no-bake treat that really does taste amazing this time of year. I can't wait for you to try these!

Sprinkles make everything better! Here's a little tip for you: I normally stock up on holiday sprinkles after Christmas when they are all half off. I'm pretty sure sprinkles don't go stale. You can also drizzle extra chocolate on top. You can use almond bark to dip these in which works great, but did you know that Ghirardelli makes melting chocolate wafers? You can get them in milk, dark, and white and they are SO delicious. If you can find those, you might want to pick up a bag or two.

Description

No-Bake Chocolate-Covered Fluffernutter Cookies are delicious treats that can be made in just a few minutes! An easy cookie recipe perfect for parties and holiday celebrations.

  • 1 10 oz. jar marshmallow fluff
  • 10 oz. peanut butter (about 1 cup)
  • Ritz crackers (at least 2 sleeves)
  • Dipping chocolate (about a pound)

  1. Mix marshmallow fluff and peanut butter together. Spoon peanut butter mixture onto cracker, and top with another cracker.
  2. Dip cracker sandwiches into melted chocolate. Place on wax paper and add sprinkles if desired.
  3. Let the cookies rest until chocolate is set. Store in airtight container in cool place.

Notes

This is another recipe that I don’t ever really measure. The important thing is that you mix equal parts of marshmallow fluff and peanut butter. Almond Bark works well for the dipping chocolate, and I used 2 different size crackers (regular and snack size) Decorate with sprinkles, crushed nuts or white chocolate. This is a good one for the kids to help with because it doesn’t require any baking.
