There is just something about a delicious homemade meatloaf. It’s like a big warm hug of homemade goodness. Meatloaf is one of the #1 requests of my personal chef clients. And this turkey meatloaf with mushrooms is one my clients love when they are looking for a lightened up version of of traditional ground beef meatloaf.

Even if you aren’t a mushroom fan, you will love this meatloaf. The finely chopped mushrooms (use a food processor to do the work for you) melt right into the meatloaf as it bakes. They add umami flavor or the essence of deliciousness to the turkey meatloaf.

Ground turkey can be a little bland. Each of the ingredients in this savory meatloaf adds to its deliciousness. One of the key ingredients, cremini mushrooms, adds the meaty and savory taste that deepens the flavor of the turkey meatloaf.

  • Skip the extra lean ground turkey for this recipe. Lean ground turkey (usually 93% lean) will add the needed fat for a tasty meatloaf.

how to make an easy homemade gravy

Are you a gravy lover? It takes just a few minutes to make a rich and herby gravy for homemade meatloaf.

In a small saucepan, melt 1 tablespoon butter over medium heat. Add 1 tablespoon flour and stir to combine. Cook for about 1 minute. Slowly whisk in 1 cup of chicken stock. Continue cooking for 3 to 5 minutes or until the desired thickness. Stir in some chopped fresh parsley. Season to taste with kosher salt and pepper.

If you are not a gravy fan, pour about 1/4 cup of warm chicken stock over the sliced meatloaf to make it extra juicy and tasty. This will also keep any leftovers fresh testing after they are reheated.

This is an unbelievably tender and loaded with flavor turkey meatloaf with mushrooms recipe. A lighter version of the classic beef meatloaf, this juicy and delicious meatloaf gets a boost in umami flavor from cremini mushrooms.


  • 2 cups chopped cremini mushrooms
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 garlic cloves, chopped
  • 1 and 1/3 pounds ground turkey, 93% lean
  • 1/2 cup seasoned bread crumbs
  • 1 large egg
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper


  1. Preheat oven to 375 degrees F. Line a large rimmed baking sheet with foil. Set aside.
  2. Put mushrooms, onion, celery, and garlic into the bowl of a food processor fitted with a metal blade. Pulse 5 to 10 times or until the vegetables are finely chopped. Place the vegetables into a large bowl.
  3. Add the remaining ingredients to the bowl with the vegetables.
  4. Gently mix the ingredients until just combined.
  5. Form the meat mixture into a loaf about 7 inches by 10 inches on the prepared baking sheet.
  6. Bake for about 45 to 50 minutes. The meatloaf should be golden brown and caramelized on the edges. The internal temperature should be 165 degrees F on a digital thermometer.
  7. Remove the meatloaf from the oven and let cool about 10 minutes before slicing.
