This recipe comes to us from FDP team member Bri DeRosa, who first shared it on her Red, Round and Green blog. We always make two chickens when we have Sunday chicken — it seems like a lot, and it is, but it means that a) you’ll be prepared for unexpected guests; and b) you’ll have enough leftovers to make several lunches, or to pop into a whole second dinner (chicken pot pie, anyone?). I also save the carcasses for making homemade chicken stock, so nothing goes to waste. Ingredients2 whole roasting chickens, approximately 4-5
pounds each Optional: Herbs — fresh or dried — any combination you like. We often like dried herbs de provence in the wintertime; for fresh herbs, rosemary, thyme, parsley, fennel, and even basil or dill can be used. You’ll need a few tablespoons of minced fresh herbs, or one tablespoon of dried. Something to stuff into the cavities of the birds — we usually quarter a lemon, an orange, and a whole onion (don’t bother peeling anything), and stuff the cavities with a mixture of the fruits and onion. Instructions1. Preheat the oven to 400 degrees. Don’t buy that pre-cooked Rotisserie Chicken!! Make your own savory, tender, juicy Oven Roasted Chicken, seasoned just the way you like it, and save yourself the money! Oven Roasted Chicken and Sunday Dinners go together like peanut butter and jelly! There is nothing better than coming home after church to the smell of a roasted chicken in the oven. Then afterward we would have the whole family come together to eat Sunday Supper with the roasted chicken as the main dish.
We didn’t wait for a holiday dinner to serve a roasted chicken. It is served all year round, usually on Sundays since that was when we had the time to slow roast it in the oven. However, since we moved and we have a smaller group of folks for the holidays, this Roasted Chicken recipe will very likely be on our holiday table as well. What Makes Roasted Chicken Taste So Good?

Is it better to bake a whole chicken at 350 or 400?It all depends on what you are looking for. For extremely tender, fall off the bone meat and soft skin, roast between 300 and 350 degrees. For firmer meat and crisp skin, roast the chicken around 425 degrees F.
How long should I bake a chicken at 350?It takes roughly 65 to 80 minutes to bake or roast 2.5 to 3 pounds of a whole chicken in an oven that has been preheated to 350 degrees; however, it takes approximately 80 to 95 minutes to bake 3.5 to 4 pounds of a whole chicken in the same oven at the same 350 degrees temperature.
How long does it take to roast a 5lb chicken at 400?Roast the chickens at 400 degrees for about an hour and a half, depending on the size of the birds. The way I figure time for this is to take the average weight of one of the chickens (say, 4.5 lbs) and calculate 15 minutes per pound (that would be about 67 minutes for a 4.5 lb chicken).
How long does an average whole chicken take to cook? The short answer here is: set your oven to 350 degrees F. Put your whole, unstuffed chicken in the oven, and it's going to take 20 to 25 minutes for every pound that chicken weighs.
